Guatemala Los Suspiros – a new addition from the Mia Coffee Roasteryin Liberec !This exceptionally smooth and elegant coffee will enchant you from the very first sip with its balance and purity of flavor. A juicy sweetness unfolds in the cup, accompanied by notes of stone fruit and a fresh citrus line that gives the coffee liveliness and lightness. The aftertaste reveals a delicate caramel and hints of honey sweetness. Guatemala Los Suspiros has a medium to light body, a clean aroma, and a pleasant, longer aftertaste. Thanks to its harmony, it is the ideal choice for anyone who wants to treat themselves to an elegant, refreshing cup with beautifully balanced acidity and sweetness.

It comes from the Huehuetenango region of Guatemala, specifically from the Finca Los Suspiros family farm, which is run by the fourth generation of the Palacios family. The farm is located at an altitude of around 1,500–1,900 meters above sea level, which, together with the local microclimate and fertile soil, allows the cherries to ripen slowly and develop complex flavors—all of which contribute to the excellent quality of this coffee.

The Villa Sarchi variety used was processed using the washed method, which excels in its purity and clearly highlights the coffee's flavor profile. The cherries are hand-picked only when fully ripe, then hulled and fermented in clean water to separate the fleshy pulp. After fermentation, the coffee is thoroughly washed and slowly dried in the sun on traditional concrete patios. This process helps to develop the natural sweetness of the beans and ensure that they dry evenly. The result is a coffee with a clean, elegant flavor that stands out especially when prepared using a filter—whether in a Chemex, V60, or Aeropress.

Pleasantly fruity, just the right amount of acidity, low bitterness
The descriptors mentioned can really be found in the taste, even though I haven't tasted much of it yet.
Ideal for the V60, easy to tune, and has a decent range of flavors.
I haven't managed to perfect the Aeropress yet.
