Ethiopia Chelchele from Boo Roastery is a fascinating seasonal specialty coffee that will captivate you from the very first sip with its incredible explosion of fruity flavors, juiciness, and rich complexity. In the cup, an intense and playful profile unfolds, masterfully blending exotic notes with a sweet depth. The flavor experience is dominated by sparkling notes of pineapple and passion fruit, which seamlessly transition into the sweet character of blueberry jam. The entire composition is beautifully rounded out by bittersweet cocoa beans, which lend the coffee a full body, elegance, and a pleasantly long finish. This is an exceptionally clean and complex coffee that will perfectly delight any lover of modern and flavorful coffee experiences.

The origin of this exceptional batch lies in the legendary Ethiopian region of Yirgacheffe, specifically in the Gedeo zone, Gedeb district, and the village of Banko Chelchele. The coffee trees here grow at an impressive altitude ranging from 1, 900 to 2,300 meters above sea level in fertile red clay soil, creating absolutely perfect conditions for growing specialty coffee. The harvest is managed by a community of smallholder farmers for whom coffee production is a traditional livelihood. During the harvest, which takes place from October to December, only optimally ripe coffee cherries are carefully and selectively handpicked, ensuring the beans have maximum quality, high density, and a concentrated aromatic profile.

In terms of botanical origin, these are native Ethiopian Heirloom varieties, specifically selections 74110 and 74112. The coffee was processed at the local Banko Chelchele station using the innovative Super Natural method. The whole coffee cherries were dried with their pulp under strictly controlled conditions, allowing the beans to absorb all the natural sugars and aromatic compounds from the fruit. After primary processing at the station, the beans were transported to a dry mill in Addis Ababa for careful sorting by size and density. This precise process gave the coffee an exceptionally full body, a pronounced natural sweetness, and an unmistakable fruity character.
