Ethiopia Chelbesa from Kmen Coffee Roasters is a filter coffee for anyone who loves clean, floral cups. The coffee comes from the Chelbesa processing station in the Gedeb region of Yirgacheffe, one of Ethiopia's most famous coffee regions. Approximately 672 small farmers supply coffee to the station, growing their coffee trees in small gardens at an altitude of around 2,200 meters above sea level. They mainly grow the local varieties 74158 and 74112, which fall under the broader designation of heirloom, typical of Ethiopia. It is the combination of high altitude, traditional cultivation, and rich soil that gives this Chelbesa its delicate floral, elegant profile.
The beans are processed using the washed method. After delivery to the station, the cherries are first sorted and then the skin is removed using economical eco-pulpers. The coffee then ferments in tanks for 2 to 3 days to remove the remaining pulp , followed by approximately 12 hours of soaking in clean water and drying on raised African beds for7–10 days. After drying, the coffee is sorted again by hand, rested in storage, and only then sent to the roastery. Thanks to this careful washing process, Chelbesa has a crystal-clear flavor with beautifully defined notes of jasmine, grapes, and bergamot.
