Ethiopia Blue Lagoon from DAK Coffee Roasters is a distinctive natural lot from the Guji region, characterized by intense fruitiness and a sweet, dessert-like flavor. The cup is dominated by a combination of blueberries, strawberries, and orange cake, giving the coffee the impression of a juicy fruit cake in liquid form. The higher altitude of around 2,000 meters above sea level gives the coffee a lively but pleasantly rounded acidity and a lighter body.
The coffee comes from the Buku Abel washing station in the Hambela area of the Guji zone. The station is located on a small hill at an altitude of 1,900–2,100 meters above sea level, where the coffee has ideal conditions – plenty of sun, cooler winds, and rich red soil. Small local farmers bring their cherries during the day, and careful sorting takes place until the afternoon to ensure that only fully ripe fruits of local Ethiopian landraces are processed. It is the combination of high altitude, the Guji terroir, and sensitive processing that gives Blue Lagoon its clean, brightly fruity character.
The natural processing method used here enhances the fruit intensity and sweetness. After delivery, the cherries are first sorted by hand and then dried whole on raised African beds in the open air. During drying, they are regularly turned and checked to slow down the drying process and ensure it is as even as possible. The result is a cup where the natural sweetness and aroma of the pulp is transferred to the bean, so that with every sip you get a serving of blueberries, strawberries, and orange sweetness that you will truly enjoy.
