The coffee comes from the Gedeb region of Ethiopia , specifically the Halo Beriti area , which is among the most sought-after locations for specialty coffee. Local smallholder farmers grow native Ethiopian varieties here in small gardens at elevations of 1,850–2,200 meters above sea level. Thanks to the high altitude, the coffee cherries ripen slowly, allowing for the development of complex flavors and distinctive aromas. The region’s terroir consists of fertile, nutrient-rich soil, regular rainfall, and a mild climate, which together create ideal conditions for growing coffee with a bright and clean flavor profile. The harvest took place by hand during the spring of 2025, with an emphasis on the precise selection of only fully ripe cherries.
Processing is done using the dry method, which is traditional in Ethiopia and brings out the coffee’s natural sweetness. Freshly harvested cherries are spread out on raised African beds, where they are slowly sun-dried for several weeks. During this process, they are regularly turned and sorted to ensure even drying and eliminate defects.
