The YacuriFarm is located in Ecuador, specifically in the Saraguro region of Loja Province. Coffee is grown here at high altitudes, ranging from 1,800 to 2,200 meters above sea level. The farm, which also serves as a processing and washing station, is owned by farmer Juan Peña. The coffee trees here are traditionally grown in the shade, which imparts both a delicate acidity and depth of flavor.Ecuador is a country of incredible diversity in coffee and its varieties, providing a home to varieties such as this Typica mejorado. This variety is known particularly for its hardiness, but also for its complex flavor, which combines fresh citrus acidity with the sweetness of stone fruit. Coffees of this variety are often accompanied by an exceptionally floral aroma.
The coffee processing begins with hand-picking, during which only fully ripe cherries—at the precise moment when their sugar content is highest—are carefully selected. After harvesting, the cherries are washed with Andean water under low pressure to remove impurities. After washing, further sorting takes place, during which only cherries in perfect condition—with uniform color and overall structure—are selected. From this point on, the cherries are processed using the classic natural method; they are dried on solar drying beds or on traditional elevated African drying racks. The total drying time is about 20–30 days, depending on conditions. During this time, the cherries must be turned 3–4 times a day to prevent uneven drying and overheating of the beans. It is precisely the meticulousness of this method that rewards the final cup with sweetness, body, and intense aroma.
