The coffee comes from Hacienda Pillcocaja in Ecuador’s Azuay region, where it is produced by the Crespo family. Coffee trees here grow at an elevation of around 1,700 meters above sea level, and this particular lot consists of the Typica variety. Hacienda Pillcocaja is responsible for the entire Honey Dude production process, from cultivation to the careful preparation of the harvested cherries for subsequent drying.
Honey Dude is processed using the natural method, in which the coffee beans are dried inside the whole cherries. In this case, the source also mentions careful shade drying, which takes place directly on the farm. The longer contact between the beans and the pulp during natural processing generally promotes a sweeter and fuller-bodied coffee, which is well reflected here in notes of melon, maple syrup, and cookies.
