The coffee comes from the Guji region of Ethiopia, specifically Shakiso, where it is grown by smallholder farmers at elevations between 1,950 and 2,210 meters above sea level. Dimtu Coffee Industry is behind the production; the company has a long-standing partnership with the farmers and helps them bring their coffee to market in the best possible quality. The higher elevation and the resulting slower ripening of the coffee cherries contribute to the coffee’s complex flavor profile and pronounced fruitiness. The Heirloom, 74110, and 74112 varieties lend the coffee the typical Ethiopian playfulness and fruitiness that are so characteristic of Guji.
Natural processing plays a major role in the final result. During the slow drying process, natural fermentation takes place within the cherries, enhancing the coffee’s pronounced fruitiness, sweetness, and the fuller character of the resulting cup. As a result, the coffee is distinctly aromatic, juicy, and has a long, sweet aftertaste that lingers long after you’ve finished your cup.
