Behind this coffee is Origin Coffee Lab, a project by José Rivera founded in 2017 in Cajamarca in northern Peru. This company not only exports select coffee, but also provides financing and business know-how to local farmers. It helps with quality control and access to new markets so that they have a more stable income and can focus on growing great coffee, which then ends up in your cup. Every purchase supports the long-term sustainability of coffee in this region.
The semi-anaerobic method means that after harvesting, the coffee cherries undergo fermentation in a partially closed environment with limited oxygen access. The process is slower and better controlled, developing greater sweetness, juiciness, and more pronounced fruity notes in the bean, but the cup remains clean and harmonious. Storing the beans in whiskey barrels does not play a major role, but rather elegantly highlights what is already naturally present in the coffee. Over the course of several weeks, the beans absorb the aroma of wood and whiskey, but do not lose their own character or clear flavor profile.
