This coffee treasure comes from Colombia, more specifically from the renowned Huila region. Located high in the Andes, the area is known worldwide among enthusiasts for its absolutely ideal climatic conditions and fertile soil rich in volcanic minerals. Heiner Lasso grows his coffee trees here at atruly impressive altitudeof 2,100 meters above sea level. This extremely high elevation ensures very slow and even ripening of the cherries. The plant thus has plenty of time to draw the absolute maximum of nutrients from the surrounding harsh natural environment, producing a bean with enormous potential and high density. The result of the farmer’s meticulous care perfectly reflects the beauty of the local high-altitude environment.

The secret to its unconventional and vibrant profile lies in an exceptionally bold processing method. After hand-picking only the ripest fruits, a washed anaerobic method is used, enhanced by special co-fermentation. After peeling, the fruits are hermetically sealed in special tanks without oxygen access, where they ferment together with fresh lemongrass leaves. During this precisely controlled process, the grains naturally absorb the essential oils and aromatic compounds from the added herb. Subsequent thorough washing with clean water ensures that the beverage retains maximum purity and clarity. This experimental technique thus very delicately enhances the natural floral characteristics of the fruit without any unwanted aftertaste.
