The coffee comes from the Finca Las Brisas farm in the Acevedo region of Huila, run by John Wilmer Cuellar. The farm is located at an altitude of 1,550 meters and specializes in the Geisha variety, which is considered one of the most prestigious varieties in the world for its aromatic complexity. John Wilmer devotes great care to each bush, from the careful selection of ripe cherries to the control of each step of the processing. This ensures that the resulting coffee is consistent and full of delicate, sophisticated flavors that reflect both the terroir and a commitment to quality.
Processing is done using the traditional washed method, which preserves the purity and delicacy of the final cup. After harvesting, the cherries are de-pulped and fermented in controlled tanks to develop all the fruity and floral notes. The beans are then carefully washed and dried on raised African beds, where they are regularly turned to ensure even drying and prevent unwanted fermentation.
