Colombia La Hormiga from the Liberec-based MIA Coffee Roastery is a clean and fresh espresso with an elegant character. Grapes and citrus fruits lend the cup a juicy vibrancy, while cane sugar adds a subtle sweetness.
This coffee originates from the La Hormiga farm in the mountainous area of San Agustín in Colombia’s Huila region. It is a small family farm spanning one hectare and situated at an elevation of 1, 780 to 1,810 meters above sea level. It is run by farmer Aura Rita Bolaños together with her husband and son. Aura Rita grew up in a family of coffee growers and gradually took over the craft, significantly refining their cultivation and post-harvest practices in recent years. She has focused on the careful selection of coffee cherries and consistent processing. Although La Hormiga is a small farm, the resulting coffee reflects the extraordinary care of the entire Bolaños family. Volcanic soils, a humid mountain climate, and the slow ripening of the cherries give the coffee the typical balanced and complex character of the Caturra variety. San Agustín is, after all, a region renowned for its elegant coffees with lively acidity and exceptional clarity of flavor.
La Hormiga was processed using the traditional washed method. After fermentation lasting 18 to 24 hours, the coffee beans are slowly dried for 18 to 22 days on raised drying beds under a shelter. This gentle drying process preserves the clarity and sweetness of the cup and gives the coffee its elegantly structured profile.
