Finca Monteblanco, managed by Rodrigo Sanchez Valencia, is a farm with a rich history dating back to his grandfather's generation. It is located close to the Cueva de los Guacharos protected park and the Suaza River, which provide the farm with ideal natural conditions. Rodrigo grows varieties such as Caturra, Geisha, Pink Bourbon and Pacamara, and for Jungle Juice #3 he chose the rare Purple Caturra, a variety known for its higher sugar content and great potential for experimental processing. The microclimate of the Acevedo region at an altitude of 1,730m gives rise to coffees with a complex and sweet profile, and Jungle Juice is clear proof of this uniqueness.
The processing itself is a masterpiece of innovation: the carefully hand-picked cherries are first subjected to an 8-day fermentation in a closed environment with the addition of natural yeasts and mangoes, which enhances the coffee's fruity character. The coffee is then fermented for a further 180 hours along with this aromatic blend. The result is a cup full of juicy tropical sweetness, grapefruit freshness and a subtle cocoa aftertaste that stand out for their sheer purity and complexity.
