We travel high into the majestic mountains to the village of Paicol on the western edge of Colombia’s Huila region. Here lies the El Calamar farm, run by Gildardo Lopez Hoyos with his wife Yolanda Bolaños and their four children. An elevation of 2,000 meters above sea level creates ideal conditions for growing the local varieties. Hard work pays off, and farmer Gildardo Lopez recently won first place in the Copa de Oro,a prestigious regional competition in cupping (tasting and evaluation) of specialty coffees. These successes constantly motivate the family to further develop and plant the exclusive Gesha variety.
The classic washed processing method ensures a dazzlingly clean profile. The cherries are de-pulped and sent to tanks, where water removes the remaining pulp. Washing gives rise to a sparkling flavor without fermented tones and enhances the overall lightness. The foundation is the carefully processed Pink Bourbon variety, an absolute botanical rarity that grows primarily in the mountainous Huila region. This variety has built a following of enthusiastic fans for its amazingly sweet aromatic character and purity.
