David Berrio’s farm is located in the Urrao region of Colombia, which is known for its difficult accessibility. It is a micro-farm spanning just 1.5 hectares, where the Chiroso variety is primarily grown. Thanks to its exceptional altitude, it produces coffees with exceptionally distinctive flavors. SEY Coffee began collaborating with the farm several years ago and considers its lots to be among the most distinctive within the Chiroso variety.
The coffee was processed using the washed method, in which carefully harvested cherries—picked at their optimal point of ripeness—are then sorted by hand. They are kept in this state for another 24 hours before being transported on horseback to the processing station. The coffee cherries are then de-pulped and transferred to fermentation tanks. Here, they are processed using the cochadas method, in which coffee is gradually added to the tanks and then washed together on Monday. In the final step, the coffee cherries are dried until they reach an optimal moisture content of 10.5%.
