Floral, juicy, and with a beautifully sweet fruity profile—that’s this Colombian coffee from the Brooklyn-based roaster SEY. In the cup, plum, mulberry, and candied lemon come together, giving the coffee a lively, clean, and very elegant character. The plum brings a rounder fruitiness, the mulberry adds a subtle sweetness with a slight berry note, and the candied lemon pleasantly brightens the entire profile. 

The coffee comes from Colombia, specifically from the Urrao region in Antioquia, and more precisely from the Bella Vista farm. Behind this lot is Carmen Montoya, who played an important role for SEY years ago—it was her Chiroso that first significantly introduced the roastery to both the variety and the entire Urrao region. Furthermore, in 2014, Carmen won the Colombian Cup of Excellence with the then-little-known Chiroso variety, thereby helping to draw buyers’ attention to northern Colombia as well. The coffee grows at an elevation of 2,000 meters above sea level, and the variety used is Chiroso, genetically identified as a native Ethiopian variety (landrace).

The beans were processed using the washed method. The cherries are hand-picked at peak ripeness, then floated to remove defective fruits, and hulled on the same day they are harvested. This is followed by eight days of underwater fermentation, washing, and drying on raised beds until the moisture content reaches 10.5%. It is precisely this longer, yet meticulously controlled process that helps preserve the clarity of the profile while enhancing both sweetness and complexity.
