The cup is dominated by a sweet and balanced profile that perfectly captures the classic character of high-quality Brazilian espresso coffee. ThisSANTO ANTONIO PBfromBrazil, roasted by The Barn, features notes of hazelnut, vanilla, and a subtle coffee sweetness, complemented by the light acidity typical of the Minas Gerais region. Gradually, hints of nougat and a subtle caramel aftertaste emerge, giving the coffee a rounded and very pleasant character. Thanks to the natural processing method, the espresso has a fuller body, a creamy texture, and a smooth profile without any harshness. Peaberry beans also often deliver a more intense and concentrated flavor profile, so the resulting cup is bold yet still very easy to drink and well-balanced.

In the Santo Antônio do Amparo region of Minas Gerais, Brazil, the Sancoffee group was founded, which has been uniting local farmers with a shared vision of high-quality specialty coffee since 2000. From the very beginning, they focused on developing specialty coffee in the region and gradually built a modern infrastructure for coffee processing and storage. Today, Sancoffee is among the leading names in Brazilian specialty coffee and places great emphasis on supporting the local community, sustainability, and protecting the region. Their work also includes long-term support for farmers and a commitment to improving production quality with every harvest. In 2019, the group obtained B-Corp certification, which confirms its commitment to a more responsible and sustainable approach.

After harvest, the coffee cherries are moved to a concrete drying patio, where they are processed using the natural method. The beans are spread out in very thin layers, almost “side by side,” to ensure the most even exposure to the sun and air. During drying, the cherries must be turned regularly and carefully monitored to prevent uneven drying or unwanted fermentation. It is precisely this slow and controlled drying that helps highlight the sweetness, clarity, and consistent flavor profile of the resulting coffee.
