Rwanda Huye Mountain – this spring limited edition from The Barn is a juicy and sweet coffee that perfectly captures the energy of spring in a cup. The flavor is dominated by blueberry and vanilla, complemented by strawberry and cherry, with a subtle hint of cane sugar and dark chocolate in the aftertaste. The profile is fruity, sweet, and very well-balanced, with a pleasant juiciness and a long, smooth finish. The coffee works great in a pour-over as well as an espresso, where its sweetness and playful character shine through—and when paired with milk, it resembles a strawberry milkshake.
Behind this lot is producer David Rubanzangabo, one of the key figures in the development of specialty coffee in Rwanda. The Huye Mountain farm in the Huye region lies at an altitude of around 1,770 meters above sea level and is divided into several zones, each offering a slightly different flavor profile. David has been working with local farmers for a long time, motivating them to focus on quality and supporting them not only financially but also through education. Thanks to this, Huye Mountain is among the most respected projects in the country and regularly achieves top results, including the Cup of Excellence award.
Processing is done using the natural method, which highlights the coffee’s fruitiness and sweetness. After the ripe Red Bourbon cherries are hand-picked, they undergo thorough sorting and flotation to ensure only the highest-quality beans advance to the next stage. These are then dried on raised African beds for 3 to 4 weeks, during which they are regularly turned and inspected. This slow and precise process allows the full flavor complexity to develop and preserves the purity of the profile. The result is a cup that combines sweet fruitiness, a delicate vanilla note, and a long, elegant finish.
