This lot comes from the Lalesa region of Ethiopia in the Gedeb area, known for its long tradition of coffee cultivation. Thanks to an altitude of 2,150–2,200 meters above sea level, the coffee trees here have ideal conditions – cooler nights, plenty of sun during the day, and rich soil that supports complex flavor profiles. The Gedeb station brings together small farmers who grow the native Ethiopian varieties Kurume, Wolisho, and Dega, and the January 2025 harvest yielded beans with exceptional sweetness and juiciness. Coffee from this area is traditionally sought after for its diversity and purity, and this lot confirms it – classic Ethiopia with a modern twist.
This coffee is processed using the slow dry method, which is very labor-intensive and time-consuming. After harvesting, the cherries are placed on raised beds under a special greenhouse-like cover, where they are dried for 20–25 days. This process slows down the drying process and prolongs fermentation inside the cherry. The result is a fruitier flavor profile that is richer and more complex than that of conventionally dried coffees. This demanding process requires careful attention and sufficient space, as the coffee cherries must be spread out in a thin layer to ensure even drying. The resulting coffee is then ready for export to be enjoyed by specialty coffee lovers around the world.
