Whether you prepare it as a filter coffee or espresso, you are in for a unique taste experience that will transport you to the deck of a pirate ship anchored somewhere off the Caribbean coast.

The coffee comes from the Altos Guayabos farm in the Ortega region of Tolima, in the heart of the Colombian Andes. The farm is run by Aristobulo Rayo, a farmer with many years of experience and a deep respect for the land, tradition, and innovation. Aristobulo focuses on growing select varieties and puts not only his work but also his passion for detail and quality into every harvest. The Tolima region is known for its ideal microclimate, high altitude (in this case 1,830 meters above sea level) and rich soil, which create the perfect conditions for growing the Geisha variety—one of the most respected and aromatic varieties in the world.

This coffee is processed using the washed method, which ensures a clean and balanced flavor profile that brings out the natural character of the variety. After fermentation and washing, the coffee is further aged in wooden barrels that previously held Caribbean rum, where it absorbs subtle notes of alcohol, spices, and vanilla. This process is time-consuming and requires careful monitoring, but the result is a truly exceptional taste experience.

Good day, Rosťo. This barrel-aged coffee has a really smooth flavor—it's based on Geisha, which has a very elegant profile, and the rum notes often start to come through a few days after opening, due to slight oxidation. If you want to get more flavor out of the coffee, we recommend a finer grind and longer extraction, ideally 15 g per 250 ml, poured in 3 batches. Alternatively, try preparing it in a French press or with a metal filter, which will allow more coffee oils to remain in the coffee and give the final coffee a fuller body. Have a nice day! :)
