In your cup, you’ll find an incredibly clean and juicy profile reminiscent of fruit juice. The star of the show is the pronounced red currant acidity combined with refreshing notes of lemongrass, all subtly underscored by a delicate hint of black tea.
This coffee comes from the well-known Tanzanian cooperative Iloma AMCOS, which brings together 391 local farmers. It is grown in the Songwe region on fertile volcanic soils that provide the coffee plants with the nutrients needed to develop complex flavors. Bourbon coffee trees, specifically the KT423 variety, ripen here at an elevation between 1,800 and 1,900 meters. The result is a dense, high-quality bean that embodies the typical character of the Tanzanian terroir, which, according to some experts, is beginning to rival the quality of its renowned neighbor, Kenya.
The coffee is processed using the traditional washed method. Immediately after harvest, the coffee cherries are transported to the processing station. They then spend approximately 24 hours in fermentation tanks filled with water, which gives the coffee its purity and clarity of flavor profile. The beans are then spread out on African drying beds, where they are dried for 11 to 14 days until they reach the ideal moisture content. This meticulous process ensures that every cup offers a juicy and clean coffee that is a joy to drink every day.
