Edinson Argote SL28 from Tanat Coffee is a Colombian coffee intended for pour-over brewing. It has a clean, fresh, and distinctly aromatic profile. In the cup, notes of bergamot, lemongrass, and eucalyptus come together to create a light, bright, and elegant flavor. The acidity is medium, the body is silky, and the overall profile is very smooth. This is the perfect filter coffee for moments when you want a coffee with herbal-citrus energy, but without any heaviness or excessive wildness.
The coffee comes from Colombia, specifically from the Oporapa area in the Huila region, from the Quebraditas farm. Edinson Argote is behind the production; he works with precise micro-lots ranging in size from approximately 100 to 300 kilograms of coffee cherries. This lot consists of the SL28 variety, grown at an elevation of 1,750 to 1,800 meters. Harvesting takes place from November to January, and only very ripe cherries—at least 80% of which are at optimal ripeness—are selected for processing. Subsequent sorting in water helps remove minor imperfections even before fermentation begins.
Processing is carried out using the Advanced Washed method, which relies on double fermentation and careful monitoring of each stage. After an initial 72-hour fermentation, the coffee is dried for 12 days until it reaches approximately 20% moisture content. It is then rehydrated for four days using selected yeasts, which help guide the fermentation more precisely. Finally, the coffee undergoes a final drying period of 76 hours at a temperature of 40 °C. This process is technically more demanding than standard washed processing and allows the producer to manage the fermentation in a highly targeted manner.
