Finca Hartmann, located in the Santa Clara area of the Renacimientu region, is a pioneer of Panamanian specialty coffee, which switched to high-quality production in the late 1990s. The family, now in its third generation of coffee growers, has dedicated its life to the coffee cycle—from the first bloom to the harvest and processing of the coffee cherries—while maintaining harmony with the environment. The farm, located at an altitude of 1,300 to 2,000 meters above sea level, consists of several smaller plots and nearly 100 hectares of forest reserves adjacent to the Parque Nacional de La Amistad national park. All coffee is grown in the shade of native trees, which naturally enrich the soil.
Thenatural method is often used in areas with water shortages, especially in Africa and in dry areas of Latin America, such as Brazil. In dry processing, the cherries are spread out on concrete surfaces or beds and dried in the sun or using dryers. The coffee is turned regularly to prevent mold and unwanted fermentation. Once drying is complete, the husk is mechanically removed in a dry mill. Dry processing adds characteristic flavor elements to the coffee that are independent of the variety or terroir. Properly executed drying brings fruity tones and a creamy body to the cup.
