The Los Lajones farm is located at an altitude of 1,600–2,000 meters above sea level and is one of the highest in Central America. It was founded by Graciano's father in 1992 when he and his son bought it from a local cattle rancher. Today, Graciano continues the family tradition while pushing the boundaries of organic coffee cultivation. His Los Lajones and Emporium farms were the first certified organic farms in Panama. In the lower parts, Caturra and Yellow Catuaí coffee trees grow in the shade of Inga trees, while in the higher elevations there is a young garden of the legendary Geisha variety growing among bamboo bushes. The harvest is mainly carried out by members of the indigenous Ngöbe-Buglé ethnic group, whom Graciano pays fairly above the standards common in the region.
Dry processing with short fermentation of the cherries and subsequent drying on African beds enhances the natural sweetness and tropical fruitiness of this coffee. Graciano, a well-known promoter of the natural and honey methods, introduced this process in Central America at a time when many farmers did not believe in it.
