The coffee comes from Panama, specifically from the Alto Quiel region in Boquete. Behind this lot is Lamastus Family Estates, which works with the Geisha variety at an altitude of 1,575–1,800 meters above sea level. It is precisely the higher elevation and cooler conditions that help the cherries ripen more slowly, which then translates into sweetness, clarity, and more pronounced aromatics in the cup. The Geisha variety is known primarily for its floral and exotic fruity character, and here it beautifully demonstrates why it ranks among the most sought-after coffees in the specialty coffee world.
Processing is done using the natural method. This means that after harvest, the coffee cherries are dried whole, along with the pulp. The beans thus have longer contact with the fruit sugars, which helps develop sweetness, fruitiness, and a fuller body. With such an aromatic Geisha, however, the drying process must be monitored very carefully to ensure the coffee remains clean and does not become overly fermented.
