This lot comes from Finca Esther in the Boquete region of Chiriquí, Panama. The farm is located on the slopes of the Barú volcano at an elevation of 1,550 meters above sea level and is part of the Mas Cafe Panama family of farms. Producers Martín Santos Chávez and Esther Leung focus here on growing Geisha and SL34 varieties, emphasizing quality, sustainability, and meticulous work during every stage of production. Local conditions play a huge role—volcanic soil, clean mountain air, and a diverse ecosystem create an environment that helps develop the coffee’s distinctive and easily recognizable character. According to Mas Cafe, every harvest reflects their long-standing emphasis on innovation, precision, and the effort to create truly exceptional lots.
Processing is done using the classic natural method, which helps highlight the sweetness and fruity notes in this coffee. The coffee cherries are hand-picked only at optimal ripeness and then carefully sorted to remove unripe or overripe fruits. After harvesting, they undergo flotation in water, where lower-quality cherries are separated, and are then transferred to raised beds. There, they are dried in a thin layer slowly and evenly for at least 21 days until they reach the ideal moisture content. Before final processing, the coffee is allowed to rest and then undergoes further sorting, including hand-sorting, to ensure the resulting cup remains clean, sweet, and distinctly complex.
