Poppy Beans presents Mexico VAYICHIL Decaf, a coffee that shatters all preconceptions about decaf beans. From the very first sip, it captivates with its sweetness and pleasant roundness—the flavor features notes of chocolate, caramel, and delicate fruit, which together create a balanced and smooth profile. The acidity is gentle and unobtrusive, and the body feels clean and harmonious. It’s exactly the kind of coffee you can enjoy at any time of day without worrying about caffeine, yet without compromising on flavor.

The coffee comes from the Chiapas region of Mexico, specifically from the Vayichil farming community, which brings together small-scale producers focused on high-quality and sustainable cultivation. High-altitude conditions, rich soil, and the farmers’ meticulous work result in beans with natural sweetness and balance. Each harvest is the result of manual labor and a long-term relationship between producers and exporters who prioritize not only quality but also fair conditions for everyone involved.

The final flavor is achieved through a gentle decaffeination method designed to preserve as much of the coffee’s original flavor profile as possible. The beans are decaffeinated naturally, without aggressive processing, allowing their natural character to shine through. Subsequent processing and drying emphasize purity and flavor stability, resulting in a full-bodied, sweet, and authentic cup. Mexico Vayichil Decaf thus demonstrates that even decaffeinated coffee can be a truly satisfying experience.

It's nice to see decafs that aren't from Colombia like 90% of them.
The roast quality is good, no bitterness.
Unfortunately, the coffee tastes very flat. You can easily tell that it is a decaf.
I barely taste cherry or pineapple. Yes, there's some sweetness and acidity, but it's not really distinctively cherry or pineapple. It doesn't taste bad, but it just has a very "default" coffee taste without much character.
I tried a lot of different brew methods, but none of them brought out any more flavor. I don't know, maybe it's just me, but I really expected more from this coffee. Maybe it's the decaf method that pulled too much flavor out of the coffee.

It tastes just as described

You can prepare it any way you like; it tastes great no matter how you make it. Is it the best decaf I’ve ever had? No, but it’s definitely one of the best. It’s also good if you want to blend it, since it’s fairly mild, so any stronger coffee will still come out on top even in a 50:50 ratio. I also tried it with coffee from Mexico, and it made an absolutely fantastic half-caff.

I highly recommend it. I’ll probably buy it again.
