Behind this coffee is Wilder Lasso, a Colombian producer from the Huila region, whose story is unusual to say the least. Originally a veterinarian specializing in livestock farming, he came to coffee in a rather atypical way; when coffee prices plummeted in 2016 and his father fell seriously ill, he decided, together with his brother, to save the family farm. But Wilder approached coffee cultivation just as he would science. He began analyzing soil samples, specifically adjusting the pH, and supplementing nutrients, thereby gradually transforming the farm—whose coffees originally scored between 80 and 83 points—into a world-class producer. September Coffee maintains a friendly relationship with him, and this trust is evident in every lot.
This Geisha undergoes anaerobic washed processing, in which the cherries are sealed in hermetically sealed tanks after harvest, where they ferment for 120 hours at a precisely controlled pH above 5.5 and a temperature between 12 and 14 °C. Slow and precisely controlled fermentation without oxygen exposure allows for the full development of floral and fruity notes without overpowering the variety’s natural character. Once fermentation is complete, the beans are washed and dried for 12 days on so-called marquesinas—covered drying beds typical of the Colombian highlands—which allow for slow and even drying without the risk of rain.
