In the cup, it is fresh and refined: higher but pleasant acidity, smooth sweetness, and a long finish that lingers even after the last sip. Created in collaboration with ePiPí, their coffees are dressed in illustrated packaging featuring owls, so this one is a treat not only for the taste buds but also for the eyes.
The Gundikhan farm is located in the hills of Chikkamagalur in southwestern India. It is run by Saif, who returned after studying in Britain as a third-generation grower and moved the farm towards sustainable farming. The coffee trees grow in the shade of native trees at an altitude of approximately 1,400 meters above sea level, and the proximity to the Bhadra Reserve creates a natural biocorridor for local fauna. The Chandragiri variety—a cross between the Villa Sarchi and Híbrido de Timor lines—produces larger, more uniform beans and, under these conditions, displays a clean, tea-like fruitiness. Thanks to thoughtful agronomy (shade, organic fertilizers, careful harvest management), the lots from Gundikhan are stable, sweet, and beautifully readable across all recipes.
The processing is fully washed.Selective harvesting is followed by flotation and hulling, then controlled wet fermentation for about 18 hours, thorough washing, and drying for about 14 days on raised tables in a solar dryer. It is this methodology that keeps the profile clean and clearly layered—mandarin juiciness, black tea, light spice—without any distracting tones. The coffee pairs well with everything from V60 to Kalita to batch brew; we recommend using a more delicate flow and medium-fine grind to bring out the tea-like character and sweet, spicy finish.
