Guatemala Los Arcos from the London-based roaster Square Mile is an espresso built on a sweet and full-bodied foundation, but it’s definitely not boring. The flavor profile blends chocolate with ripe cherries and forest fruits, lending the cup a pleasant juiciness. The chocolatey sweetness beautifully rounds out the entire profile, while the fruity notes add freshness and lightness. The result is a rich, distinctive, and enjoyable espresso that you’ll look forward to having every morning.
The coffee comes from the Jalapa region in Guatemala and is produced by Osmin Garcia, a third-generation coffee grower. He maintains full control over the processing of his harvest, having built his own processing station, La Concepcion, in 2016. It is precisely this long-term focus on quality and careful monitoring of each step that give Los Arcos coffees their characteristic fruity profile. This lot consists of the Bourbon and Caturra varieties. Furthermore, Osmin’s daughters, who are studying agronomy, are gradually becoming involved in the farm’s future.
Los Arcos coffee undergoes a washed processing method adapted to the farm’s limited access to water. Osmin therefore uses a waterless pulper to remove the skin and pulp from the cherries. The beans then undergo dry fermentation, during which the remaining mucilage is gradually released without submerging the beans in water. This processing method helps preserve the clarity typical of washed coffees while also enhancing the fruitiness. As a result, notes of cherries and wild berries beautifully unfold in the cup alongside chocolatey sweetness.
