These select beans come from the renowned Huehuetenango region of Guatemala. They were grown on the grounds of the Los Pablos farm, named after the founder’s family. First-generation producer Ramon Pablo Chalez oversees the cultivation alongside his closest relatives. All work on the plantations is carried out exclusively by family members without outside help. Ramon began growing coffee 20 years ago. Before that, he had focused exclusively on producing staple crops such as corn and beans. In the beginning, he had only a very small number of coffee trees, but he gradually managed to plant more and thus secure a stable livelihood for his family. Today, the Caturra and Pache varieties thrive in his fields, achieving the highest quality.
After harvesting the ripest cherries, the family proceeded with the classic washed processing method. Workers first removed the outer skin from the cherries and then transferred them to water fermentation tanks. Here, a carefully controlled fermentation took place, thanks to which the beans were safely separated from the remnants of the sticky pulp. This was followed by a thorough rinse with clean water and slow drying. This traditional and highly precise process guarantees the absolute purity of the final beverage and allows the natural character of the cultivated varieties to shine through. As a result, the flavor contains no unwanted elements, only clearly defined and harmonious notes.
