This coffee comes from theGedeb region of Ethiopia, from theHalo Washing Station, with which DAK is working for the first time ever. The Gedeb region is located in southern Ethiopia and is very famous and popular in the world of specialty coffee. The conditions here allow coffee cherries to develop their full potential. The lots where the coffee grows are located at higher altitudes of1,900 meters above sea level with plenty of shade, where they are cared for by smaller communities and farmers.
The coffee is processed using theanaerobic natural method, in which whole, unpeeled coffee cherries are placed in airtight containers, where they are sealed for 24 to 72 hours. Carbon dioxide is used to remove oxygen from the tanks, allowing the cherries to ferment. Because fermentation takes place without oxygen, the whole process is slower, allowing the tropical fruit notes to come to the fore. The fermentation process is carefully monitored throughout, as the method is very sensitive to fluctuations and does not tolerate sudden changes in temperature or other parameters. The method brings out exotic and unusual notes, which is why it is gradually gaining popularity in the world of specialty coffee.
