The beans come from the Gedeo region, specifically from the village of Gotiti Kebele, where coffee is grown mainly by small farmers. The cherries are harvested and processed at the Eva Gotiti processing station, which was founded in 2022 and has since built a reputation as a place where quality, sustainability, and fairness go hand in hand. The station works with more than 860 farmers from the surrounding hills, where coffee trees are grown in semi-shaded gardens under the canopy of trees. This farming method promotes biodiversity and contributes to soil health and the balance of the local ecosystem. The station also provides training, technical support, and fair purchase prices, making Gotiti a strong center of selective production in the region.
The coffee is processed using the washed method, which brings out its clean and delicate structure. Hand-picking is followed by sorting, fermentation in water tanks, double washing, and drying on raised African beds for 10 to 14 days, depending on the weather. Each lot is carefully evaluated for color, size, and flavor. Thanks to the high altitude (1900–2200 m above sea level) and traditional farming methods, the coffee has a bright floral aroma and fruity freshness that is so iconic of Ethiopian coffees.
