Ethiopia BOMBE #1 from the Czech roastery Candycane Coffee is a coffee from the Sidama region that, thanks to its anaerobic natural processing, offers a distinctly sweet and fruity cup. In the cup, the coffee is sweet, fresh, and complex, with notes of papaya, mango, and panela—unrefined cane sugar with a pleasant caramel sweetness. You’ll also find notes of roasted yellow fruit, wild berries, and raspberries in the cup. Citrusy freshness and dark fruit are complemented by a delicate chocolate sweetness with a hint of caramel. The result is a sweet, fresh, and complex coffee with a pronounced fruity character.
Bombe #1 comes from small-scale growers in the Bombe region of the Bensa district, one of the higher-altitude coffee-growing areas of Sidamo. Coffee trees here grow at elevations of approximately 1,900 to 2,400 meters. The cooler temperatures at higher elevations and the slower ripening of the cherries create ideal conditions for the development of sweetness and pronounced fruitiness. The coffee consists of native Ethiopian Heirloom varieties, which are typical of this region.
Processing is carried out using the anaerobic natural method. After careful sorting, the perfectly ripe cherries are sealed in containers with limited oxygen access, where they undergo controlled fermentation. The whole cherries are then dried on African drying beds in natural sunlight. The combination of whole cherries and controlled fermentation enhances the coffee’s pronounced sweetness, fruitiness, and complexity, while also helping to preserve the clarity of the resulting cup.
