This coffee comes from the Chiri washing station in the Sidama region, specifically from the Cheri Wereda district in the village of Hora Ela. The station is managed by Zablon Trading Plc and has been operating since 2014 on an area of 2 hectares. It works with more than 1, 100 farmers who grow varieties 74110, 74112, and 7454 in their gardens at an altitude of 1,900–2,200 meters above sea level. The station provides farmers with seedlings, financial support, and purchase premiums for high-quality coffee. At the same time, it is actively involved in environmental protection, particularly water management, and its emphasis on sustainability is reflected in the purity and character of the resulting coffee.
The coffee is processed using the washed method, which highlights its fresh and bright profile. After careful sorting of the cherries, they are washed, pulped, and fermented in water tanks for 12 to 16 hours. The beans are then washed again and dried on raised beds for 10 to 14 days, turning them regularly for even drying. After drying, the coffee is left to rest for about 20 days before undergoing sensory evaluation. This precise process ensures a cup with a delicate structure, pleasant acidity, and the typical floral and fruity character of Ethiopian coffees.
