The coffee comes from the Brunca region of Costa Rica, specifically the Los Tonos plot within the Corazón de Jesús project. Johnny Alvarado Abarca is behind the production. The high altitude helps the cherries ripen more slowly, allowing the beans to develop greater sweetness and flavor complexity. Corazón de Jesús is one of HAYB’s favorite Costa Rican projects, and the Los Tonos plot in particular showcases its more modern, fruitier character.
The variety is Villa Sarchi, a natural mutation of Bourbon originating in Costa Rica, known for its elegant acidity and pronounced sweetness. The processing method is Natural Reposado. Ripe cherries are allowed to rest in a cool place for a certain period of time before drying. This step slows down the process and allows the sugars from the pulp to have a more pronounced effect on the coffee’s final character. The cherries are then dried whole, just as in the classic natural method. It is precisely the combination of cold rest and natural drying that gives the coffee a denser, almost syrupy texture, intense notes of ripe red fruit, and high sweetness.
