WIRED, from the London-based roastery Dark Arts Coffee, is a washed coffee with a pleasantly clean and sweet flavor profile. In the cup, you’ll find notes of plum and mandarin, with a subtle caramel note rounding out the flavor profile. With a cupping score of over 86 points, WIRED ranks among the top specialty coffees and is definitely worth trying. The coffee is medium-roasted, so its flavors shine through whether brewed as a filter coffee or an espresso.
WIRED comes from small-scale farmers of the Paeces indigenous tribe in the village of Inzá in Colombia’s Cauca region. The farmers there cultivate small family plots ranging from 0.5 to 1.5 hectares at an elevation of 1,700 to 2,000 meters above sea level. The soil is volcanic and very rich in nutrients, and the climate is mild, with temperatures between 16 and 22 °C. All of this combines to create ideal conditions for the slow ripening of Caturra and Castillo coffee cherries. The quality and sustainability of the entire process are ensured through the collaboration of Occicafe, Globalcafe, and Cofinet, which maintain direct relationships with the local community and enforce strict quality control.
This coffee has undergone a classic washed process, which perfectly suits its profile. After harvest, farmers hull the cherries, ferment the beans, and, after washing, dry them until they reach optimal moisture content. The washed method is responsible for the cup’s characteristic clarity, allowing notes of plum and mandarin to shine through unimpeded, while a caramel note adds a pleasant finish.
