This Indonesian coffee from Dark Arts Coffee showcases the more delicate and cleaner side of Indonesian coffees. Notes of apple, raisin, and macadamia nut come together in the cup, giving the coffee a pleasantly sweet, rounded, and at the same time fresh character. The fruity notes are reminiscent of a juicier apple; the raisins add a deeper sweetness; and the macadamia nuts soften the entire profile into a smoother, nutty finish. Thanks to the washed processing method, the flavor remains clear and clean, without any heavy fermentation notes, so the individual layers are easily discernible from the first sip through to the mellow aftertaste.
The coffee comes from Indonesia, specifically from the village of Wolowio in the Bajawa region on the island of Flores. Behind this lot is the Nola Wonga Farmers Group, founded in 2014 by Felix Soba. The group was established with the goal of protecting the local organic coffee heritage at a time when short-term vegetable farming was spreading throughout the area. The producers work sustainably and interplant coffee trees with other horticultural crops, which helps support local biodiversity and economic stability. The variety is S795, and the coffee grows at an elevation of 1,300–1,600 meters above sea level.
The coffee is processed using the washed method. After harvest, the cherries undergo floating, a process in which lower-quality fruits are separated in water, followed by manual sorting. This is followed by fermentation, which helps cleanse the beans of pulp residue and prepare them for drying. The coffee is then dried on raised beds, where air circulation is better and the beans can dry more evenly. It is precisely this meticulous processing that enhances the coffee’s clarity, sweetness, and balanced character in the cup.
