Behind the coffee is Jhon Samboni, a third-generation farmer who, together with his wife and daughters, has been building the Santa Barbara farm in the Huila region since 2018. The farm is located at an altitude of around 2,050 meters in the picturesque town of Algeciras and is home to several varieties, including Geisha and Bourbon. Jhon has a clear vision: to invest in infrastructure and food on the farm so that he can continuously improve his processes and thus ensure better living conditions for his family and employees. The result is not only beautiful coffee, but also a story of determination and belief that hard work pays off – in this case, literally.
Santa Barbara boasts experimental processing that gives the resulting flavor unexpected depth. This Castillo lot underwent 48-60 hours of anaerobic fermentation, which gives it intensity, and was then dried on raised beds in the sun until it reached the right moisture content. This was followed by several weeks of stabilization in GrainPro bags, which ensure balance and consistency of flavor. The result? A coffee that offers unique complexity and layering – ideal for those who like their cup to surprise them with every sip.
