This isn’t just coffee—it’s an experience that will captivate you from the very first sip! In a cup of this Colombian coffee from Wave Coffee Roasters, a sweetly spiced explosion of flavors awaits you— baked apple, cardamom, caramel pudding, and a subtle hint of lemon cream. The result is a rich, dessert-like profile with beautiful depth and a pleasant, lingering aftertaste. With every sip, it feels warm, complex, and surprisingly clean. If you want to try something truly exceptional and push your coffee boundaries, you’ve come to the right place.
This coffee originates from the Cauca region of Colombia, specifically from the Finca El Paraíso farm, which is known for its experimental approach to processing. At an elevation of 1,960 meters above sea level, the coffee trees have ideal conditions for slow ripening, which translates into a fuller flavor and greater sweetness. The Maragogipe variety, known for its unusually large beans, reaches its maximum flavor potential here thanks to the nutrient-rich soil and the farm’s meticulous work. The result is a microlot with an SCA score of 88+, which clearly demonstrates just how far specialty coffee can go.
The Maragogipe variety offers delicacy and elegance on its own, but here it takes on a whole new dimension thanks to unique processing. The process begins with cultivating koji on dried coffee pulp and husks, which ferment for several days at a controlled temperature. The active culture is then transferred to whole cherries, where fermentation continues with oxygen exposure. This is followed by wet fermentation inspired by the Amazake method, known from Japanese cuisine, which enhances natural sweetness and complexity. The entire process concludes with controlled drying in a dehumidifier, which stabilizes moisture levels and locks in the resulting flavor profile.
