Colombia MILAN PASSION FRUIT from the Polish roastery Foundation Coffee is an omni roast that captivates with its distinctly fruity and playful character. In the cup, passion fruit, strawberries, and iced tea come together to create a sweet and juicy profile with a pleasantly subtle acidity. Thanks to co-fermentation with passion fruit, the coffee is very aromatic and intense, yet retains its clarity and distinct flavor profile. It is suitable for both filter brewing and espresso, where it offers an unconventional fruity experience full of sweetness and exotic notes.
The coffee comes from Finca Milán in Colombia’s Risaralda region. The farm is run by Julio César Madrid Tisnés, a third-generation farmer who combines years of experience with a modern approach to coffee processing. Finca Milán is part of the Café Uba project and, together with the La Riviera and Buenos Aires farms, focuses on producing specialty coffees with an emphasis on quality, innovation, and sustainability. The coffee trees grow here at an elevation of 1,730 meters and benefit from the unique conditions near Los Nevados National Park. The farm also protects local water sources, supports biodiversity, and creates fair employment opportunities for the local community.
This lot consists of the Purple Caturra variety processed using the “co-fermented washed passion fruit” method. The process is based on washed processing, supplemented by controlled fermentation in the presence of passion fruit. This method highlights the coffee’s fruity and aromatic notes, giving the final profile an intense tropical character. After fermentation, the beans are washed and then dried to the optimal moisture content. The result is a clean, sweet, and distinctly fruity cup that demonstrates just how interesting modern fermentation techniques can be while maintaining the coffee’s high quality and balance.
