La Correa from Pražírna Krok is a Colombian filter coffee that combines fresh citrus notes, delicate floral tones, and a sweeter chocolate base. In the cup, you’ll find chamomile, lime, orange, cocoa, and marzipan, giving the coffee a lively yet pleasantly rounded character. The lime and orange provide a juicy citrus note, the chamomile softens it with a subtle tea-like touch, and the cocoa and marzipan ensure a sweet, smooth finish.
The coffee comes from the area around the village of Bruselas in the Huila region and was grown by Oliverio Ñañez and his family on the La Correa farm. Farming is truly a family affair for the Ñañez family. Oliverio and his wife involve their children in the work, and they invest the money they earn not only in the farm’s further development but also in the education of their children and grandchildren. Conditions in the surrounding hills, however, are not easy. Heavy rains cause soil instability, and landslides can even affect parts of the farm where coffee trees are grown. Nevertheless, the family continues to expand production, improve processes, and experiment with less common varieties. It is precisely the nutrient-rich local soil and meticulous work that give the coffee a delicate, balanced character with citrus and floral notes.
The profile of this coffee features the Caturra, Colombia, and Castillo varieties. It is processed using the washed method and involves a longer fermentation process divided into two phases. After harvesting, the fully ripe cherries are first fermented for 36 hours in tanks. They are then hulled, followed by approximately 30 more hours of fermentation with the remaining pulp layer. The coffee is then transferred to a drying facility, where, due to the cooler local conditions, it dries for approximately 20 days until it reaches optimal moisture content. The washed processing helps preserve the clarity and brightness of the cup, while the extended fermentation enhances sweetness and complexity.
