This Brazilian coffee from Berlin-based roastery The Barn is a filter coffee that tastes smooth, sweet, and very elegant, yet has enough character to captivate you from the very first sip. The flavor profile unfolds with sweet strawberry, cherry , and guava, complemented by chamomile, oolong, and a subtle milky note reminiscent of fruit yogurt or strawberry gelato. The entire cup is juicy, aromatic, and beautifully rounded, with a slightly fermented undertone that gives it a modern yet still clean and smooth profile.
The coffee comes from Brazil, specifically the Alta Mogianaregion, and is produced by Vanessa Moreno at the Fazenda São Felipe farm near the city of Franca. After completing her studies and spending time in the city, Vanessa returned to the family farm to reconnect with the land and transform the farm’s operations toward more sustainable practices. Together with her mother, she manages the farm’s agricultural work, where they invest in regenerative technologies, biodiversity restoration, reforestation, and water conservation. The Catuai variety grows here at an elevation of 1,100 meters above sea level, and it is precisely the combination of terroir, family roots, and a sensitive approach to the soil that gives this coffee its pleasantly clean and balanced character.
Processing is done using the anaerobic natural method , which in this case helps bring out the sweetness, fruitiness, and greater depth of the cup. The cherries are first sorted and cleaned, then fermented for 40 hours in a closed anaerobic environment. They are then dried whole on patios, including the skin, which promotes a fuller and richer flavor profile. It is this process that gives the coffee its distinctive fruitiness, a subtle lactic note, and a smooth, sweet texture that feels very pleasant and natural in the cup.
