The coffee comes from the Espírito Santo do Pinhal farm, managed by farmer Jose Ferraz. This area lies at an altitude of 900–1260 m above sea level and is known for its ideal climate for growing coffee – the alternation of warm days and cool nights helps the sugars in the coffee cherries to develop, which is reflected in the sweet flavor profile. This particular batch comes from a late harvest, when the cherries reach maximum ripeness, resulting in higher sugar content and a fuller flavor. The farm is run by a family with a deep connection to their land and tradition, which is reflected in the care taken in growing and harvesting the coffee cherries. Brazil has long been the world's largest coffee producer, but it is small farms like Jose Ferraz's that prove that quantity can go hand in hand with quality.

The coffee cherries are processed using the traditional natural method – dried whole, with the pulp still attached, directly in the sun. This method preserves the rich, sweet and full flavors of the coffee while enhancing its delicate fruity character.
