What happens when a coffee roastery, a local brewery, and an ice cream parlor come together? Affogato blend! Ascarive, part of the Brazilian cooperative Cocarive, represents a number of small farmers with Fairtrade certification in the Sul de Minas region of Minas Gerais — one of the most important coffee-growing areas in Brazil. Thanks to close collaboration with the Fairtrade foundation and a strong emphasis on excellent quality to achieve better prices, Ascarive has grown. Regular participation in the Cup of Excellence competition and close cooperation with roasters and importers confirm that Ascarive is a significant force on the global market.

In the dry method, the cherries are spread in a thin layer on concrete patios or African beds to dry after harvest. The coffee must be regularly turned to prevent the formation of mold and avoid unwanted fermentation. Once drying is complete, the husk is mechanically removed in what is known as a dry mill. The dry processing itself imparts certain flavor aspects to the coffee regardless of the variety or origin. These are often positive, but if the drying process is poorly executed, it can lead to negative results, irreversibly ruining the entire lot (part of the harvest). In cases of improper drying, the coffee may develop fermented or even alcoholic notes, yeast, or even manure. On the other hand, when the drying process is done correctly, the dry method always brings fruity flavors and a creamy body to the cup.
