Strawberry jam, plums, and the tropics at the foot of Mount Langbiang? This is a side of Vietnam that’s a far cry from the countryside. ZanYa Supernatural from the Slovak roastery Kaffa is a bold filter coffee with a rich, syrupy texture and lively burgundy acidity. The flavor gradually shifts between tropical fruit, sweet strawberry jam, and ripe plum, so every sip tastes a little different. The result is a juicy, sweet, and layered coffee with a distinct fruity character that earned a cupping score of 87 points.
The beans come from the area around Dalat, at the foot of Mount Langbiang in Vietnam, where they grow at an elevation of 1,500 to 1,650 meters above sea level. Behind the ZanYa project is Slovak Marián Takáč, his partner Lim, and families from the local Ko’Ho tribe. Together, they have been building their own processing station there since 2018, giving local farmers the opportunity to process and taste the coffee they grow themselves. This lot consists of the Catimor, Bourbon, Typica, and Caturra varieties and comes from the 2025/2026 harvest.
Its most distinctive feature is the “Supernatural” method, which involves open fermentation with oxygen exposure. Unlike anaerobic processing, naturally occurring yeasts and bacteria from the surrounding environment freely enter the process. During fermentation, they break down the sugars in the pulp and help create a more pronounced, complex profile. This is precisely why ZanYa refers to environment-controlled fermentation rather than a precise recipe. In the cup, this approach manifests as a syrupy body, wine-like acidity, and intense fruitiness.
