The coffee itself is the same as in Horizont espresso beans. It comes from Brazil from the Andrade brothers, our partner farmers. The Andrade family's coffee history dates back to 1901. The great-grandparents of the current chiefs founded the Capim Branco farm in the Carmo do Paranaíba region of Minas Gerais state. They built an extensive infrastructure capable of producing enormous quantities of coffee. However, their children were not particularly fond of this style of cultivation. In the 1970s, they decided to transform the farm and focus on growing high-quality coffee instead of excessive volumes. They took advantage of the natural potential of their farm's environment. It is located at an altitude of between 1,100 and 1,200 meters above sea level, which guarantees a perfect balance between dry and rainy seasons in this area.
In the early 1990s, they joined a group of other progressive producers and became co-founders of the Brazilian Specialty Coffee Association. This association represents all specialty coffee producers and helped them greatly in the early stages of changing and developing their production. Today, they are among the most progressive and successful farmers in Brazil. The cherries are harvested by special harvesters that are modified so as not to damage the carefully tended coffee trees. All harvested cherries pass through an optical sorter, which separates unripe cherries, defects, and twigs. The biggest innovations are taking place in the processing field. The farm has refrigerated rooms and a bioreactor for controlled fermentation experiments.
Making a coffee capsule is no joke. Over the last few months, we have been exchanging samples with our partners who fill the capsules for us. Grinding is key in the production process – it is essential to ensure that the coffee is ground finely enough, but evenly, so that it extracts properly. We gradually worked out the weight and exact coarseness of the grind to ensure that you always enjoy Horizont at its best at home. For this reason, we have decided to go with plastic capsules with aluminum closures for now. Of course, we tested various biodegradable capsule options, but we always ran into issues with shelf life. Because the capsule is not hermetically sealed, aromatic substances slowly escape. The resulting coffee can then taste stale and lack crema and body. Even after launch, we are continuing to search for a compostable option that meets our quality requirements.
