Las Virginias from Prodigal Coffee is a Honduran coffee that rightfully took 4th place in the Exotic category at the 2026 Cup of Excellence Honduras. In the cup, expect ripe mango, rhubarb, and rum-soaked raisins—a flavor profile that is intense, sweet, and beautifully layered. The mango brings tropical juiciness, the rhubarb adds a fresh, slightly tart note, and the rum-soaked raisins shift the entire cup toward a deeper, sweetly spiced profile.

The coffee comes from Honduras, specifically the Marcala region, from the Las Virginias farm. Behind this lot is Fabio Antonio Caballero, a young producer and the fifth generation of a farming family. He only began his own coffee production in 2020, yet he has already made a significant name for himself at Cup of Excellence auctions. Prodigal describes him as a rising star of Honduran specialty coffee, and this lot is a beautiful testament to why. Las Virginias builds on his work with the La Salvaje farm and demonstrates that Fabio can combine family expertise, precise processing, and a modern approach to quality.

Varietally, it is a blend of Geisha and Pacamara, two distinctive varieties that offer aroma, sweetness, and complexity. The processing method is 48-hour anaerobic washed. Ripe cherries were first hand-picked and washed with water to remove defective fruits and impurities. The whole cherries were then left to rest for 16 hours during aerobic oxidation; the following day, they were hulled and sealed in barrels for 48 hours of anaerobic fermentation without oxygen. After fermentation, the coffee was washed and dried for 15 to 20 days on elevated African drying beds under 50% shade.
