Another exquisite offering from Tim Wendelboe that’s well worth your attention. In the cup, the Honduras CIELITO LINDO offers a distinctly fruity profile with notes of berries, herbs, and cocoa nibs that gradually unfold and complement each other beautifully. The coffee comes from the highest part of the Finca Nacimiento farm, one of the most suitable areas for coffee cultivation in Honduras, which is clearly reflected in its clarity and complexity. It will therefore delight all coffee lovers who appreciate a full-bodied, fruity, and juicy flavor profile and are looking for something truly distinctive yet balanced.
Behind this coffee is Jobneel Caceres Dios, who runs the Nacimiento farm together with his wife, Fany. Tim began working with them back in 2009, and thanks to this long-term partnership, their coffee has gradually risen to the top in the Santa Barbara region and become well-known and beloved among all coffee enthusiasts. Their emphasis on quality and meticulous approach to cultivation is reflected in every harvest. Cielito Lindo comes from the highest part of the farm, and this is clearly reflected in its flavor and quality, which remain consistent and reliable year after year.
The coffee is processed using the washed method, which highlights its clean and distinct character. Harvesting is done by hand, with a focus on selecting only perfectly ripe cherries to ensure the highest possible quality of the final cup. These are then hulled, and the coffee undergoes classic washed processing, during which it is fermented in water to remove any remaining pulp. After thorough washing and sorting, the coffee is dried under controlled conditions to preserve its character and balance. Thanks to this meticulous approach, the resulting coffee is bright, balanced, and maximally transparent in flavor, allowing its origin and processing method to shine through.
