Behind this phenomenal coffee experience are hundreds of small-scale farmers who deliver their fresh cherries to the excellent Gachatha processing station. We are located in the famous and fertile Kenyan region of Nyeri, which is renowned worldwide for producing the highest-quality beans. The local cooperative doesn’t limit itself to just processing coffee; it also provides its members with invaluable agricultural training, including the management of its own demonstration plots and the distribution of new seedlings. Farmers here primarily grow traditional local varieties, to which modern and highly resilient hybrids are gradually being added. This particular recent winter harvest perfectly reflects the community’s immense care.
The clean profile of this cup stems from a very meticulous and traditional washed processing method. After the farmers hand-pick the ripest fruits, the cherries are sent to an old and reliable pulper, which uses clean water and gravity to separate them according to their actual density. The hulled beans are then dry-fermented in special tanks for 12 to 16 hours. This is followed by another thorough washing and careful sorting. The drying process itself takes place on raised African drying beds for approximately 10 to 14 days, during which workers regularly turn the coffee and protect it from the harsh sun and nighttime humidity.
